Oh what to do with leftover rotisserie chicken? In the summertime my choice is chicken salad. There are so many variations and this is one of my favorites. Many complimentary favors... moist chicken, tart Gorgonzola, sweet berries, toasted walnuts and crunchy celery. Its like an explosion in your mouth.

Coconut Cake has a long lineage in our house. This recipe has been tested many times in my kitchen and I believe I have captured the sweet taste of coconut in a really moist cake complemented by a Mascarpone cheese custard like frosting. I added clove to subtly give a warm, sweet and aromatic taste that evokes the tropics.
